Pernilla's Toblerone muffins

A different kind of muffin made possible with Toblerone, the ingredient bearing its name. 

  • Sprinkle a little confectioner’s sugar on top and they are ready to serve.
  • Who knew Swedish entertainer Pernilla Wahlgren was such a whiz in the kitchen? We certainly didn’t. But after having tried several of her recipes, we return from time to time to her blog (pernillawahlgren.se) for more.

  • This time our eyes fell on her Toblerone (you know, the Swiss chocolate?) muffins. The recipe yields about 10 muffins.

  • 150 g butter (at room temperature – remember there’s 113 g in one stick of butter)
    6 oz sugar
    2 eggs
    8 oz flour
    1 teaspoon baking powder
    a bar of Toblerone.

  • Instruction:
    Preheat oven to 390. Mix butter and sugar with electric mixer, add one egg at a time and then the flour (already mixed with the baking powder). Take out 10 muffin cups, and spoon the batter into them. Push one piece of Toblerone in each cup. Bake in the middle of the oven for 12 to 15 minutes. Sprinkle a little confectioner’s sugar on top before serving.
